From The Kitchen Of.....


I recently came across a great recipe I thought that I would share with you. If you like spinach and artichoke dip, this is the meal for you.


Spinach & Artichoke Mac-n-Cheese

You will need the following

*1 pound whole wheat penne
*2 Tbsp EVOO
*3 Tbsp butter
*1 medium onion finely chopped
*3 garlic cloves, chopped
*3 Tbsp flour
*1/2 cup chicken broth or dry white wine
*2 cups milk
*1/4 tsp nutmeg
* 1 (10 oz) box frozen chopped artichokes,defrosted and drain
* 1 (10 oz) cox frozen chopped spinach,defrosted and drained
*Pepper
*1 & 1/2 cups shredded Italian cheese
*1 & 1/2 cup grated Parmigiano-Reggiano


Bring a pot of water to boil, salt, and cook pasta
Meanwhile heat EVOO and butter in a medium pot over medium heat
Add the onions and garlic to pot and cook until soft, about 10 minutes
Heat broiler, and position to middle rack
Turn up heat under pot and sprinkle flour into the pot
Cook for 1 minute then whisk in the broth and cook for another minute
Whisk milk in and bring to a bubble
Add nutmeg, artichokes, spinach,salt and pepper, simmer until thicken and heated through
about 2 to 3 minutes more
Add 1 cup of each of the cheeses and stir until melted
Toss the sauce with the cooked pasta and transfer to a casserole dish
Sprinkle the remaining cheese on top then brown it under the broiler, about 3 minutes
